Easy Potato Spinach Curry

All Potato lovers, here is one more quick easy recipe for you. There are many ways of making  potato spinach curry recipe  and here is one delicious and easy version, which I have been making from so long  using my pressure cooker.Hope you all like it 🙂

Easy Spinach Potato curry

Ingredients:

  • 1lb chopped red potato’s(quartered with skin)
  • 1lb chopped fresh spinach(about 4-5 cups)
  • 2 big Salad tomatoes, chopped
  • 2 tablespoons grapeseed oil
  • 1tsp Caraway seeds(u can find in wholefoods or sprouts)
  • 1 inch piece fresh ginger, minced
  • 2 ga1 red onion, minced
  • 2 garlic cloves, minced
  • 1 teaspoon turmeric powder
  • 1⁄2 teaspoon chili powder
  • 1 teaspoon Garam masala powder(wholefoods or Asian store)
  • 1/2 cup coriander , chopped
  • 1 1/2 tsp salt ( as per your taste)
  • 2TBSP roasted peanut powder
  • 1TBSP roasted Seasame powder
  • 1TBSP fresh lemon juice
  • 1pinch sugar( optional)

Directions:

  1. First Chop all the potato’s and keep aside in a bowl of water.
  2. Heat oil in a pressure cooker
  3. Add carway seeds followed by ginger,garlic,onion and sauté together for a minute.
  4. Add turmeric powder, chili powder, garam masala, and saute well.
  5. Add Spinach, coriander and pinch of salt
  6. Now drain the potatoes from the water and add to the pan, along with the tomatoes and mix well for a min.
  7. Add 1 1/2 cups of water. Salt to taste.
  8. Cover the pressure cooker lid and cook until one whistle.( it takes 7,8min)
  9. After one whistle turn off the gas and wait for 10min until pressure is gone.
  10. Open the lid and add peanut and sesame powder and pinch of sugar and fresh lemon juice
  11. Garnish with chopped cilantro and serve hot.
  12. Tip: dry roast peanuts and sesame seeds in a pan on medium flame and make powder in coffee grinder in advance. If you don’t like nuts you can replace with coconut powder. This goes well with any type of bread, rice or quinoa
