Quinoa Beetroot Khichadi

Quinoa Beetroot Khichadi

Ingredients:

  • 1 cup organic quinoa
  • ¾ cup organic Brown rice
  • I bunch beetroot with leaves
  • 2 TBSP olive oil
  • I /2 bunch chopped parsley
  • 1tsp whole black peppers,1tsp cumin seeds,2 tej patta,1/2 tsp methi seeds
  • 1tsp Italian seasoning
  • 1tbsp fresh chopped ginger and garlic
  • 1 small chopped red onion
  • 1tbsp Balsamic vinegar OR Red wine vinegar
  • Salt as per your taste,1tsp red chilli powder(as per your taste)

Directions:

  1. First clean the quinoa nicely and keep aside in a strainer. Soak rice for 20-30min in a bowl. Chop all the beetroot leaves. Then peel and grate them nicely.
  2. Take a pressure cooker and add oil. Afterwards, add all the ingredients except vinegar and salt. After that, add rice and quinoa and stir for a while. Now, add 4 cups of boiled water, salt, and vinegar. Cover the lid and let it cook. Finally, turn off the gas after 2-3 whistle.
