Simple Sabudana Khichadi(fasting version)

Its a most requested recipe from my friends! This is what I prepare during Maha Shivratri and  Navaratri fasting days. This is one of my hubby’s all time favorites!

Simple Sabudana(Tapioca pearl) Khichadi

Ingredients:

  • 2 cup Sabudana (Tapico pearls)
  • 1 cup roasted Peanut powder
  • 1 small-med chopped Potato (optional)
  • 2TBP Olive oil
  • 1 tsp Cumin seeds
  • 1tbsp fresh grated ginger
  • 4-5 chopped green Chillies or as per taste
  • Salt to taste
  • 2tbsp Lemon juice, freshly squeezed!
  • Few sprigs of Curry leaves and handful chopped Cilantro to garnish

Directions:

  1. Soak Sabudana(large pearls which we can buy in any indian store) for 15-20 minutes in cold water. After 20 min drain all the water and keep aside for 4-6hrs. Generally I do this process at night if I’m planning prepare khichadi in the morning.
  2. Roast the Peanuts and grind as coarse powder.
  3. Take a big frying pan and add oil.
  4. When oil hot, add cumin seeds, graated fresh ginger, chillies,curry leaves, potatos and lilttle bit salt.
  5. cover the lid and let it cook for 5m in low flame.
  6. Now add sabudana and give it a quick toss then add peanut powder, salt.
  7. Finally add cilientro, lemon juice, give a quick toss again. Serve hot!
  8. Tip: Its easy to make if you get good quality Sabudana! Sometime after soaking 6-7 hrs also you can feel that sabudana’s are still hard. That time sprikle more water and wait agin for 30m before you prepare.
