Easy Eggless Banana Bread

Last Sunday, we had so many ripe banana’s sitting in a bowl. So, in the evening, my little one gave me a fantastic idea! Why don’t we bake bread and have a fun time! We both used all the bananas in trying my healthy version of banana bread, which came out soft and moist without eggs. My girls just loved it. Even their friends enjoyed during lunchtime next day and some of them were asking for the recipe. I have decided today that I have to share with my friends who are really looking for some healthy baking. We really enjoyed this with coffee, tea, and chocolate milk. I hope you guys enjoy it too 🙂

 

Easy Eggless Banana Bread

Ingredients:

  • 5-6 medium over ripe Organic Bananas
  • 1.5 cups Organic whole wheat flour
  • 1 cup Organic All purpose flour
  • 2 TSP Baking powder
  • 1/4 cup Organic Yogurt
  • 1/2 cup Organic Milk
  • 1/2 TSP Salt
  • 1Cup Organic Brown sugar
  • 8 Tablespoon any oil (I used light olive oil)
  • 2 TSP Vanilla essence
  • 1 Cup Chopped Walnuts (optional)

Directions:

  1. Preheat your oven at 375 F.
  2. Peel and chop the bananas. add them to a bowl and mash them with a fork.
  3. Now add sugar, oil and vanilla essence, organic milk and plain yogurt to the above mixture.
  4. Take a different bowl and sieve both the flour, baking powder, salt nicely.
  5. Add this to the above prepared banana mixture.
  6. Fold the dry ingredients into the wet ingredients very well.
  7. Finally, add the chopped walnuts and fold again..
  8. Pour the batter in a greased or lined 4×8-inch loaf pan. This recipe makes 2 loafs
  9. Bake in the preheated oven for 45 mins or till tooth pick inserted in the cake comes out clean.
  10. After 10min cooled, slice and serve banana cake plain with tea or coffee or milk.
  11. Variation: You can also add raisins or any dry fruits of your choice. For Vegan, please try with almond milk and skip the yogurt. Rest of the recipe goes same!
