Drumstick Coconut Curry

Drumsticks are very beneficial for health. We all make Drumstick Sambar with south Indian breakfast using lentils of our choice. However, this one is quick if you have coconut milk at home. It goes well with any type of rice, Upma, Idli, or Dosa. You can also drink this curry as soup or stew. It’s a very simple and healthy vegan side dish.

Drumstick Coconut Curry

Ingredients:

  • 4 long Drumsticks peeled and cut into 2 inch pieces
  • 2TBSP Oil,
  • 1TSP mustard seeds
  • Handful of curry leaves
  • 1 big Onion sliced
  • 1TBSP fresh ginger garlic paste
  • 2 big salad tomato’s chopped
  • 1TSP turmeric powder
  • Salt to taste
  • Green chillies slit4
  • 1/2 TSP Red chili powder
  • 2 TSP Tamarind pulp
  • Handful of Coriander leaves
  • 2 small cans of Organic Coconut milk

Directions:

  1. Heat oil in a deep pan, mustard seeds, curry leaves, onions, green chilies and sauté till lightly browned. Add the tomato,Ginger garlic paste, turmeric powder and the drumsticks and give a quick stir. After a min, add the red chili powder, salt and stir again. Now, add one can of coconut milk and a cup of water. Cover and cook till the drumsticks are well cooked. Afterwards, add tamarind pulp and fresh coriander leaves and reduce the heat. Finally, add other can of coconut milk and turn off the heat.
  2. Tip: If you use a pressure pan for this recipe, please turn off the heat after one whistle. Afterwards, add tamarind pulp and a can of coconut milk.
