Couscous Fruit Paradise

This one is so different and unique dessert. Specially would like to dedicate to HOLI FESTIVAL( festival of colors). This time try making something different and special for your loved ones.

Couscous Fruit Paradise

Ingredients:

  • Traditional couscous 1 cup
  • Sugar 1 cup and 2TBSP
  • Apple, chopped 1/2 cup
  • Pineapple chopped 1/2 cup (used can)
  • Frozen Mango Chunks(chopped) 1/2c
  • Sliced Cashew nuts 1/4 cup
  • Sliced Almonds 1/4 cup
  • Butter 1/4cup
  • water 3 cups
  • Pineapple essence (Optional) ½ tsp drops
  • Salt A pinch
  • Orange color 1/4tsp

Directions:

  1. First Chop all the fruits and keep aside.
  2. Heat a pan with butter and add the cashew nuts and almond slices. Just give it a stir.
  3. Add the regular traditional couscous and roast for 4-5 min until the raw smell goes off at low flame .
  4. Now add water and let it boil. In-between add pinch of salt and mix well until it gets thick in consistency(5-6min)
  5. At this point add sugar, orange color, pineapple essence.
  6. Cook covered for 3-4 minutes or until done in low flame.
  7. Add the all fruits and Mix well and cook it for 2min(Save some for decoration later)
  8. Keep mixing until the couscous starts leaving its sides and transfer to the serving mold, pressing gently into the mold and top with fruits and decorate accordingly.
  9. Note: You can use various fresh or canned fruits like pear, fresh grapes, apricots, plum, banana.
  10. Tastes really great with the fruits and nuts giving it a great texture, just out of this world!
