Stuffed Sweet Potato Flatbread

I got this recipe from my sister. I recreated few things here and there by adding few extra spices etc. If you are craving a unique sweet and if you are good at cooking and rolling flatbreads, then you are going to love this. It takes time for preparation and cooking, but it’s worth spending time during the holidays. It fills you up with warmth and sweetness!

Spinach Chutney with Spring Onion

This is absolutely delicious and one of the most requested recipe at my work. I have been thinking to post this from last month. Finally, my friends, I got a chance to post this today. I make this healthy chutney very often which goes well with any type of bread as spread. You can use this while making any type of sandwich or Panini. You can serve as a dip with any type of chips. It’s a very good way to provide some green veggies into your children’s diet if they are picky eaters. If you love spinach, you will fall in love with this this chutney (dip).

Drumstick Coconut Curry

Drumsticks are very beneficial for health. We all make Drumstick Sambar with south Indian breakfast using lentils of our choice. However, this one is quick if you have coconut milk at home. It goes well with any type of rice, Upma, Idli, or Dosa. You can also drink this curry as soup or stew. It’s a very simple and healthy vegan side dish.

Easy Eggless Banana Bread

Last Sunday, we had so many ripe banana’s sitting in a bowl. So, in the evening, my little one gave me a fantastic idea! Why don’t we bake bread and have a fun time! We both used all the bananas in trying my healthy version of banana bread, which came out soft and moist without eggs. My girls just loved it. Even their friends enjoyed during lunchtime next day and some of them were asking for the recipe. I have decided today that I have to share with my friends who are really looking for some healthy baking. We really enjoyed this with coffee, tea, and chocolate milk. I hope you guys enjoy it too ๐Ÿ™‚

 

Baking and Cooking Workshops in Summer 2013

Baking and cooking with pre-teen and teens was lot of fun this summer! I was really amazed by the kids’ interest and parents’ support. We enjoyed baking lots of varieties of casserole’s, muffin, cakes and smoothies etc., every week! It was great to spend a good quality time with kids around. I enjoyed teaching each one of you. I’m glad that I got so many calls and emails of appreciation and heard what all the recipes kids actually prepared at home. I’m happy that few of the girls are again asking me to held one more session soon! I will keep you all posted with more sessions soon.

Texas VegFest 2013

What an exciting and awesome experience! I got an opportunity to present a demo for Vegan Indian Cuisine at Texas VegFest. We had a great time with great people around. I’m glad that everyone enjoyed samples of all types of Vegetable Fritters. For me, it was like a dream come true! I thank my family and friends so much for supporting me from the bottom of my heart!
